Cake Fest 2016

We baked an ornate cake of Brodick Castle for the Festival of Architecture’s giant map of landmark buildings. The cake has three main sections, each of which needed a five and a half hour bake.
The construction was rich fruitcake, finished in marzipan and fondant icing for robustness. The tower was structurally challenging, just like the castle itself (the original stone tower having suffered a collapse before being rebuilt with much thicker walls), but the apricot jam mortar was successful in holding the structure together.
Cake Fest Stirling was a great success, with 53 teams creating a diverse range of edible masterpieces on a map measuring 100sq.m.
